WIAW #9: Alexia Foods Review.

hey guys!
happy wiaw! i hope your short 4-day week is going well :) i personally can't wait for the weekend- i'm drowning in calc and econ. other than that my day was pretty good!

i've had lots of yummy eats lately and can't wait to share them with you. so here we go!

breakfast was an english muffin with barney butter (this stuff is AMAZING! i like love it better than peanut butter. the texture and taste are pure heaven) sprinkled with some chia seeds.


i also had some egg white veggie (packin' them in in the morning!) muffins for some protein. this was the first time i've made egg muffins and these were phenomenal. i made two versions on sunday to last me through the week: mushroom + tomato + onion, and broccoli + feta. 


here's the recipe:
Egg White Veggie Muffins
makes 12 muffins
these freeze really well - just pop them in a ziploc bag and reheat them as you eat them. 

ingredients:
  • 1 cup egg whites
  • 1/2 cup shredded cheese of choice (I used 2% cheddar)
  • salt + pepper to taste
  • 1 cup cooked veggies 
directions:
  1. Cook your veggies and set the oven to 300. 
  2. In a large bowl, mix together all ingredients.
  3. Scoop mixture into a muffin pan that is well coated with cooking spray. 
  4. Bake for 20-25 minutes or until firm in the middle.

lunch was an awesome salad (more veg!) that included more egg muffins. i chopped up some romaine, carrots, mushrooms, and onion and topped the veggie base with three chopped egg muffins, ~1/4 cup cooked rainbow quinoa, and some shredded cheese, all drizzled with some ginger sesame dressing. so good! 


 i also had a big scoop of barney butter to satisfy my sweet tooth.

workout:
  • 1.25 mile warmup
  • 3 x 1200 at 4:50 pace with equal rest
  • 1.25 mile cool down
and my stretching involved a fun recent purchase:


the stick!! i've been wanting to buy one for years now but since they're so expensive i never coughed up the money. but now that i've had a job for about 6 months i figured it was time to treat my muscles to a little love (and pain, hah). this baby hurts so good but after i use it my muscles feel so much better!

postworkout snack was a goodie: 
tortilla + barney butter, a pink lady apple, and a LOT of carrots (VEG!). i was really hungry (still working on my snacking) so i chowed down on carrots and my apple before i had the tortilla so that i did't go into a carb-monster mode, haha!



and dinner was awesome thanks to the coupon for an Alexia Foods product that I received through the Foodbuzz Tastemakers Program. I love Alexia Foods because they make delicious, gourmet, all-natural products - my family has been buying their stuff for years now.



I picked out some of the seasoned waffle fries - my favorite! These waffle fries rival some that you would get in a restaurant.

They also sent me this sweet apron - check out how cool it is!


I had my fries with a grilled turkey burger and an unpictured garden salad that I demolished while the fries were baking.

obviously in major need of a manicure ;)
Dessert was some frozen mixed berries that I ate straight out of the bag. Classy.

I had veggies at every meal - woop woop! Yay for Love Your Veggies Month :)

have you ever tried alexia foods?
do you use a foam roller or something like the stick?

  1. I'm not sure if I've ever tried Alexia food, but I've seen them in the store. Do they make sweet potato fried? Because then I've definitely tried them :) AND I don't have a foam roller but it's on my list of things to get *some day* :)

  4. i don't usually crave eggs in the morning, but i often just don't have teh energy. or i'll crave eggs for dinner. i love love love these egg muffins. consider yourself pinned, doll.

  7. I looooove egg muffins!! I mixed leftover stuffing into them once. It was soooo good. I love the alexia foods sweet potato products, but I've never tried the other ones! I definitely should, they look delicious!!

  8. That salad you had for lunch looks absolutely amazing. Woooooow! I've also heard so much about those egg-white muffins. I think it might be time to try some. And rollers are the best. I actually just got one about a month ago and I rarely go a single day without using it!

  9. I just had to click on your post when i saw that yummy salad lunch bowl! quinoa, eggs and veggies- thats my style! i have never made pure egg white muffins as i try to eat 1 yolk too bc of the b12 vitamins etc. i often make frittata!

    Mhmm! That Luna Smores bar sounds soo good! I wish I could take a bite out of it right now..
