Peanut Butter Protein Pancake {single-lady style}.

One day last week I got to sleep in because my classes didn't start til late. Instead of going with some sort of variation of my usual tortilla with nut butter for breakfast, I decided to make something else (that still included nut butter, obvi.)


The result was a protein-packed (without protein powder!) peanut butter pancake that, if I do say so myself, was pretty darn fantastic. It's fluffy, thick, and sticks to your ribs just like pancakes should.

Peanut Butter Protein Pancake
serves 1
Ingredients:
  • 1/4 cup Kodiak Cakes Flapjack Mix*
  • 2 Tbsp PB2 Powdered Peanut Butter**
  • 2 Tbsp ground flax seed meal
  • 1/4 cup egg whites
  • 1/4 cup water
Directions:
Mix all ingredients together and pour onto a warm griddle (or frying pan). Cook for about two minutes on each side on medium heat, or until golden brown. 
Remove from heat, top with your favorite toppings, and enjoy!


*You may also use another kind of pancake mix if you don't have any Kodiak mix on hand.
**2 Tbsp protein powder or 1 tbsp regular nut butter (water will need to be adjusted) can also be substituted.

but I managed to get away with the whole pancake for my{single-lady}self. 



I topped my ginormous pancake with a layer of almond butter and a drizzle of pure maple syrup. I was in heaven. 

This pancake packs 20g of protein (following the recipe exactly) and if you top it with some nut butter or greek yogurt, the protein stats will be even higher.

  1. i saw this on your twitter feed and i was like - i totally bet it uses pb2. and i was right! i don't often crave pancakes - but next time i do i'm making this. and, as i live alone, i certainly 100% the single lady style. love!

  2. I haven't always liked pancakes but lately I've been on a huge single-serving protein pancake kick in the morning! It's the best way for me to get my egg whites in :) This looks great!

  5. Haha, Popcorn does the SAME thing when I put food anywhere close to him. It's a good thing that he can't jump up on tables!

  10. In the wise words of alexandra from fun food and free weights: any food bigger than your face is awesome! I'm not a huge fan of omeletes with only egg whites, but I recently tried Greek yogurt (I know I'm a little late) and I LOVE IT! It turned me off at first because I tried the plain flavor alone thinking it was vanilla and was disgusted.
