Healthy "Paleo" Peanut Butter Cups

i was supposed to go to my cpr/first aid class (for my sports med internship) today, but google maps decided it would be a good day to trick me and take me to some super sketch area that was a good 30 minutes away from where i needed to be. i was completely lost in this random sketch place and realized i wasn't going to make it to my class in time, so i proceeded to have a total meltdown. after calling my madre and trying to figure out what to do, i ended up driving home and eating lots of these peanut butter cups. they really do make you feel better, i swear.

and as i was eating my little peanut butter cups, i managed to find another cpr/first aid class this saturday and get my work schedule switched around for the weekend, so all was well in the world again. lesson learned: don't trust google maps. like, ever. lesson #2 learned: chocolate and peanut butter fix everything.

i also realized today that these so called paleo peanut butter cups aren't exactly paleo. because peanut butter isn't paleo. major faileo. oh well, good thing i don't eat paleo! and i just said paleo like 5,000 times. i should probably shut up soon. 

except if you really are one of those hardcore paleo peeps, you might want to know that almond butter works just as well in this recipe. they're still just as (if not more) delicious!

oh and one more thing: if you make these, all of your life's problems will be temporarily solved. promise. 

Healthy "Paleo" Peanut Butter Cups

Cook Time: 10 min

Ingredients (12 mini cups)
    For the Chocolate Shell
    • 1/2 cup coconut oil
    • 3 tbsp cocoa powder
    • 3 tbsp coconut sugar
    • 1 tbsp coconut flour
    For the Filling
    • 1/3 cup all natural unsalted peanut or almond butter
    • 2 tbsp honey
    • 2 tbsp coconut sugar
    • 1/2 tsp salt
    Instructions
    Melt the coconut oil in a small bowl, then whisk in cocoa powder, coconut sugar, and coconut flour.
    Spray a mini muffin tin with coconut oil, then pour about a teaspoon of the chocolate mixture into each cup. Place pan in freezer.
    While the bottom layer is freezing for about 5 minutes, mix together peanut butter (or almond butter), honey, coconut sugar, and salt in a separate small bowl.
    Take pan out of freezer, and spoon peanut butter mixture into each cup. Flatten out the mixture with the back of a spoon, then pour about a teaspoon of the chocolate mixture over the peanut butter mixture.
    Place pan back in the freezer for about 10 minutes.
    To take the cups out of the pan, simply turn it upside down on a clean countertop.
    Store these cups in the freezer and serve immediately (the coconut oil will melt quickly at room temperature).

    Paleo Almond Scones.

    thanks to the coconut sugar that i bought the other day, i finally made a recipe that's 100% paleo! or at least i think it is. i don't really know all those paleo rules. who follows rules anyway? 

    i'm still not paleo, in case you're wondering. i've just been experimenting and i noticed that i feel a lot better when i eat baked goods made with yummies like almond flour and coconut flour instead of that white flour stuff. and i always feel like the best baker ever when i can get my mom to like paleo goodies, because she is the queen of baking.

    fyi: these are reeeeally, reeaaally good with almond milk ice cream. i bought some the other day at whole foods when it was on sale and i'm obsessed. 

    oh, and you should go check out this chocolate chip cookie scone recipe from taylor at taylor made it paleo. she makes some pretty awesome treats (oh, and she actually eats paleo. she's legit.) and those tasty little scones are what inspired me to come up with this version. 

    anyway, here's the recipe - hope you like em!
    Paleo Almond Scones

    Cook Time: 10 min

    Ingredients (8 scones)
    • 1 1/2 cups almond meal
    • 1/2 cup coconut flour
    • 1/2 cup coconut sugar (if you don't have this on hand, substitute brown sugar)
    • 1 tsp cinnamon
    • 1 tsp baking soda
    • 1/4 tsp salt
    • scant 1/4 cup almond butter
    • 1 egg
    • 1/2 cup unsweetened vanilla almond milk
    • 1/4 tsp almond extract
    • 1/2 cup sliced almonds
    Instructions
    Preheat oven to 375 degrees.
    Mix flours, sugar, cinnamon, baking soda, and salt in a medium bowl.
    In a separate bowl, combine almond butter, egg, almond milk, and almond extract.
    Add wet ingredients to dry and mix until combined. Stir in sliced almonds.
    Place dough on a sheet of parchment paper and flatten into a circle about 1 inch thick. Cut dough into 8 triangles.
    Place scones on a baking sheet covered with parchment paper and bake for 10 minutes or until scones are golden brown.

    Paleo Brownies

    Hi guys! i hope you all had a wonderful weekend and a good start to this week! i had the best weekend last weekend, i got to see luke bryan and thompson square with my family (unfortunately we missed florida georgia line due to traffic) and they were absolutely amazing. and i bought luke bryan's album yesterday, and AAAAH sooo good. i'm obsessed.


    i also survived my Spartan Race last Saturday and lived to tell the tale! i have to say, it was the best $200 i have ever spent, and some of the best 3 hours and 50 minutes of my life! i can't wait to tell you all about it - but it's going to be a couple days since i'm waiting for the race photos to be released before i publish my post.

    until then, maybe some brownies will make it up to you? i made these last week and DANG they're good. not going to lie, i kind of thought that they might turn out to be disgusting. but they were delicious!


    also, you're probably starting to see a theme with all of these "paleo-ish" recipes. the thing is, i love experimenting with different foods and i also like eating less processed foods (like white flour). a lot of paleo recipes do just that - i get to experiment with baking, my tummy is happier without the white flour, and i still get my treat fix.

    BUT, i am also not about to go out and buy a bunch of fancy ingredients just to make a recipe paleo when i don't eat 100% paleo. so when i first made these brownies i made them with 1/4 cup brown sugar and 1/4 cup sugar and they turned out wonderfully! and then i saw this huge bag of coconut sugar for $9.99 at costco and my whole not buying fancy ingredients philosophy sorta went out the window. cause i mean, costco makes you buy everything you ever might possibly need, ya know?

    i still think that sugar is sugar, regardless where it comes from. but i really like coconuts. so coconut sugar it is. very, very cheap coconut sugar, actually.

    anyways, with that paleo tangent out of the way, here's the recipe!
    Paleo Brownies

    Cook Time: 30 min
    Ingredients (16 brownies)
    • 3 oz melted dark chocolate
    • 1/2 cup melted coconut oil
    • 1/4 cup almond butter
    • 3 eggs
    • 1 tsp vanilla
    • 1/2 cup coconut sugar
    • 1/4 cup cocoa powder
    • 1/4 cup almond flour
    • 1/4 cup coconut flour
    • 1/2 cup dark chocolate chips
    Instructions
    Preheat oven to 350 degrees.
    Mix chocolate, oil, almond butter, eggs, vanilla, and sugar in a medium bowl.
    In a separate bowl mix the rest of the ingredients.
    Add dry ingredients to wet and stir until just combined. Pour batter into an 8x8 pan greased with coconut oil.
    Bake for 30 minutes, let cool & cut into squares. Enjoy!

    Paleo-ish Pumpkin Muffins

    hey guys! i just wanted to pop in and share this delicious recipe with you today. i've been experimenting baking with almond flour and coconut flour lately, and these muffins were one of my best successes. they were such a hit in my house that in less than 24 hours, only 3 of them are left! even my mom, the queen of baked goods, loved them.

    you can easily make this recipe paleo by swapping out the brown sugar & almond milk with pure maple syrup - i just didn't have any on hand. i do have to say the best way to defeat the purpose of this paleo baked good is to eat one warm with a scoop of sunflower butter and vanilla ice cream, though!
    Paleo-ish Pumpkin Muffins

    Cook Time: 25 min
    Ingredients (12 muffins)
    • 3/4 cup almond flour
    • 1/4 cup coconut flour
    • 1 tsp cinnamon
    • 1/4 tsp nutmeg
    • 3/4 tsp baking soda
    • 3/4 tsp baking powder
    • 1/4 cup packed brown sugar (replace with pure maple syrup to make this paleo)
    • 1/8 cup unsweetened vanilla almond milk (omit this if you use maple syrup)
    • 3/4 cup pumpkin
    • 2 eggs
    • 2 tablespoons coconut oil, melted
    • 1 tsp vanilla extract
    Instructions
    Preheat oven to 350 degrees and spray a muffin pan with coconut oil spray (you can find it at Trader Joe's).
    Mix flours, cinnamon, nutmeg, baking powder, baking soda, and brown sugar together in a large bowl.
    In a separate small bowl, mix together the rest of the ingredients (almond milk, pumpkin, eggs, oil, vanilla).
    Pour wet ingredients into dry ingredients and stir until just mixed.
    Scoop batter into muffin pan. Bake for 25 minutes.
    Enjoy!

    WIAW: Goals

    happy wednesday y'all! hope you're having a good week. i've had another busy one around here, stay tuned for a post going up tomorrow about something crazy exciting that i signed up for & the huge progress i've made in crossfit recently!

    but for now, here's what i've been eating lately + a little tangent at the end about my current goals.



    pizza night out with the fam! 

    i've been adding this to my coffee lately and absolutely loving it. it's delicious and pretty 'clean' for a coffee creamer, in my book. 

    a warrior bowl from vitality bowls, a local place that makes acai bowls & smoothies. this one was an acai, bananas, blueberries, raspberries, flaxseed, broccoli, soy milk, & apple juice, topped with sliced banana, strawberries, granola, almonds, goji berries, and honey. sooo good!

    one of my go-to breakfasts: coconut flour pancakes with sunbutter and raw honey

    a smoothie from vitality bowls after crossfit. this was acai, blueberry pomegranate juice, soy milk, blueberries, bananas, raspberries and whey protein

    aaand another smoothie! this was called 'the hulk' and the girl that rung me up said that she was the one that came up with it. it was really good! i can't remember exactly what was in it (and it's not on the menu online) but i know there was spinach, spirulina, almond milk, whey protein, and a few different fruits. 

    a new-to-me bar that i got at whole foods. i was starving on the way home from the PT office, and this did the trick of tiding me over til dinner. i wish i'd picked a different flavor though because i liked everything about this bar, except that the flavor wasn't super strong (which i should have expected since sunflower butter doesn't have a really strong taste). 

    grilled cheeses on black california bread have been my thing lately! this one was spinach, bacon, havarti, and cheddar. i've been eating these so often the past few days (i had two today, haha) - all different variations every time. i think my favorite was chicken, cheddar, pepperjack, and avocado. SOOO good. 

    yet another smoothie... now you guys know where all of the money from my tips goes, haha! this was the same smoothie as the pink one above, except i asked them to add spirulina. just as delicious with more nutrients!

    one of my favorite dinners: burger and sweet potato fries. this burger was a mushroom & mozzarella turkey burger from whole foods. it was really good! 

    my momma brought me whole foods salad bar for dinner at work when i didn't have time to make myself one before dashing out the door. she's the best mom in the world! & that vitaminwater zero is my all time favorite drink. 

    lots of my peanut butter chocolate chip cookie dough bites! i love having them on top of plain greek yogurt with honey for breakfast and dessert. 

    i haven't taken too many photos of my food lately (this was a collection of the past week) mostly because i've become a creature of habit, and when i find something i like, i eat it a ton for about a week and then get tired of it. the past week i basically ate grilled cheese, smoothies, egg scrambles, grapes, protein bars, and frozen yogurt.

    i am trying to work on squeezing in more fruits & vegetables since i haven't been eating a lot of those lately. i've probably eaten 4 salads since coming home from school (2 of them are in this post, haha) because i ate salads at school so often for so long that i am totally sick of them. i also hate prepping fruit! i've been getting my fruits and veggies in mostly in smoothie form because it's an easy way to get a lot of servings in and it isn't too hard to make. i also almost always have some form of green juice in the fridge (i like odwalla, naked juice, and trader joe's green juice - i just buy whatever is on sale because it's expensive). 

    i know that food has a lot to do with performance and with the rate that i'm improving in crossfit i can't help but think that if i cleaned up my eats a little bit more, i could perform even better and improve even more. i'm setting small little goals for myself to help with this, one of which is to eat MORE veggies and the other is to get bowls of berries at work instead of bowls of froyo (i get a free one every shift i work, which means a lot of free yogurt). i like setting goals of adding healthy things in, or making healthy swaps, instead of just cutting things out, because that doesn't work for me. to each his/her own!

    Peanut Butter Chocolate Chip Cookie Dough Bites

    I originally had another post going up today... but then I made these, dropped everything, and ran to my computer. They're just. that. good.

    Cookie dough is probably one of my all-time favorite foods. I mean, let's be real here: no one ever makes cookies for the actual baked cookies, do they?

    So I finally got around to making a little recipe for cookie dough. And it's perfectly acceptable to eat it for breakfast. My guess is you're probably already drooling on your keyboard. Which is also perfectly acceptable.

    Oh, and did I mention? No fancy equipment is required, just a bowl and a good ol fashioned spoon for eating.  You can thank me in approximately 3.5 minutes when you've made and devoured these.

    Peanut Butter Chocolate Chip Cookie Dough Bites

    Keywords: raw breakfast dessert snack gluten-free vegan peanut butter
    Ingredients (1 serving)
    • 1 tablespoon almond meal
    • 1 tablespoon unsweetened shredded coconut
    • 1 tablespoon creamy natural peanut butter (without added sugar)
    • 2 teaspoons raw honey
    • 1 tablespoon mini dark chocolate chips
    • unsweetened vanilla almond milk, if necessary
    Instructions
    Mix all ingredients together in a small bowl, except vanilla almond milk.
    If necessary, add a little almond milk to get the dough to stick together.
    Roll dough into small bites and enjoy!

    WIAW: Recipe Explosion

    so remember how i told you that i'd have plenty of recipes for you when i got home for break? well, i've been cooking and baking like crazy ever since i got home! i'm pretty sure i've made a different cookie every day not to mention i've been cooking a few dinners for my family. i love having a kitchen!!


    prepare yourselves.. cause i've got a lot of recipes comin' atcha!

    first up: homemade pumpkin spice latte!
    as you guys know i'm just a *little* obsessed with pumpkin at this point. i've demolished one of those huge cans of pumpkin in less than a week. and there's no signs of stopping.
    this drink is really easy to make, and if you leave off the whipped cream it's vegan!


    ingredients:

    • 2 cups almond milk (or other milk of choice)
    • 1/4 cup of pumpkin puree
    • 2 tablespoons sugar
    • 1 tablespoon brown sugar
    • 1 tablespoon vanilla extract
    • 1 tsp pumpkin pie spice 
    • 1 cup brewed coffee of choice 
    directions:
    1. heat the milk, pumpkin, and sugars over medium-high heat, whisking constantly, until milk is steamed and mixture is hot. 
    2. stir in vanilla and pumpkin pie spice and remove from heat. 
    3. in two {large} mugs, pour 1/2 cup coffee, and then pour 1 cup of the pumpkin mixture over it. top with whipped cream (if desired) and an extra shake of pumpkin pie spice. 
    up next: shrimp, brussel sprouts, and goat cheese pizza.
    i made this for dinner a few nights ago and i can honestly say this is the BEST homemade pizza i have ever made. it doesn't take too long thanks to the premade pizza dough (i highly recommend using trader joe's - it never fails me!) 


    ingredients:
    • 1 premade pizza dough (i used trader joe's whole wheat)
    • 1 1/2 tablespoons olive oil
    • sprinkle of salt, pepper, and garlic powder (you can omit the garlic powder if it's not your thang) 
    • 1/4 cup parmesan cheese
    • 2 cups shaved brussels sprouts
    • 1 tbsp coconut oil (and salt & pepper) for sautéing
    • 1/2 pound frozen peeled cooked shrimp
    • 3 cups sliced mushrooms + 1/2 cup water for cooking
    • 1/2 cup romano and parmesan cheese (i used a mix of both, but you can use whatever you prefer)
    • 3 ounces goat cheese
    directions:
    1. preheat oven to 450 degrees. 
    2. roll out pizza dough on a floured surface into a semi-round shape (as you can see i'm not too great at that). place on a pan sprayed with non-stick cooking spray and brush the olive oil over the crust. sprinkle with salt, pepper, and garlic powder, and top with parmesan cheese. 
    3. heat a pan to medium heat and add the brussel sprouts and coconut oil. once the brussel sprouts are soft, add the shrimp and cook until shrimp are hot. season with salt & pepper to taste. 
    4. meanwhile, in a different pan, add mushrooms and water and cook on medium-high heat. cook mushrooms are tender (they will be a brown color) and set aside. 
    5. add brussel sprouts, shrimp, mushrooms, & parmesan and romano cheese to pizza dough. crumble goat cheese on top and bake for 10-15 minutes. 
    and thirdly, parmesan kale chips!
    i've never cooked with kale before but this was SO much easier than i thought it would be. the key is getting a bag of washed and chopped kale from trader joe's - it makes everything so much easier!


    ingredients:
    • 1 bag chopped kale
    • 1 tablespoon olive oil
    • 3-4 tablespoons grated parmesan cheese
    • salt & pepper to taste
    directions:
    1. preheat oven to 375 degrees. 
    2. spread kale out on a baking sheet. drizzle with olive oil and sprinkle with parmesan, salt, and pepper. toss the kale around to make sure it's fully coated (i just used a pair of tongs). 
    3. bake for 15 minutes or until crispy. 
    i have a few other recipes for you - a classic holiday shortbread recipe, my mom's sugar cookies, and a few more! so be on the lookout :) 

    on another note... this girl just found out she got an A- in chemistry! to say i'm stoked is an understatement!! i have never worked harder in my life for anything and to see that it paid off makes me so freakin' happy. 


    besides cooking and baking like crazy, i've been snuggling with these cutie pies LOTS and catching up on my TV shows. i've made it through 8 episodes of Once Upon a Time in 24 hours. hey, isn't that what break is for? ;-)



    and this just cracks me up every time. i have the prissiest little chubby cat ever.

    Bangs! {& Homemade 'Vitality' Bowl Recipe}

    Guys, I went for it! I got my hair trimmed yesterday and got bangs. And so far, I love them!!


    My hairstylist did an amazing job and got exactly what I wanted - I am so happy with it! She thinned out the bottom of my hair, too, which is really nice because it always gets super thick and at the ends it kind of explodes if you know what I mean. 


    I haven't had bangs since I was a lot younger but I'm glad I took the risk and decided to try something other than the same haircut I've had for years. :) 

    In other news, I went to this place called Vitality Bowls yesterday that I've been meaning to try out. They make a bunch of acai smoothie bowls and top each with a different combo of fruit, granola, nuts, goji berries, and honey. 


    I got their original bowl which was acai, banana, strawberries, flaxseed, soy milk, and apple juice, and then it was topped with banana slices, strawberry slices, granola, goji berries, and honey. It was so good!! I never thought to top a smoothie with even more fruit - but I loved it! Definitely worth the $8 it cost. 

    I loved the bowl so much I considered going this morning and getting one for breakfast - when I realized that I could probably make a bowl that was almost as good (and one that had more protein) at home! 

    Here's what I came up with:

    Banana Pineapple "Vitality" Bowl

    Prep Time: 5 min

    Ingredients (1 bowl)
      for the smoothie base:
      • 1 cup frozen pineapple
      • 1/2 frozen banana
      • handful fresh blueberries (optional)
      • 1 1/2 scoops vanilla protein powder
      • 1 tablespoon lemon juice
      • 1/3 cup milk (add more/less to desired consistency)
      for topping:
      • 1/4 cup granola or other cereal
      • 1 cup fresh fruit (I used blueberries and raspberries, but any fruit will work)
      • drizzle of honey or coconut butter (optional)
      Instructions
      blend ingredients for the smoothie base until desired consistency is reached. since it's a smoothie bowl, the thicker, the better!
      top with granola, sliced fresh fruit, and any other desired toppings.

      This bowl was really filling and I love how customizeable it is! You could use basically any other frozen fruit in the smoothie, top it with any combo of fresh fruit and cereal, and there's so many other topping options. Shredded coconut, raisins, almond meal, coconut butter, chocolate shavings - you get the idea!

      I would've added spinach to the smoothie base (which I would highly recommend! easy way to get your veggies in early in the day!) but I ran out of spinach since I've been using so much for my 7-day Green Smoothie Challenge. This bowl's going to have to count for today since I don't have time to run to the store - but tomorrow I'm probably going to make another bowl like this for breakfast and I'll make sure to include spinach!

      Mango Blueberry Smoothie

      hi guys!
      i just got home from my amazing vacation last night - i was definitely sad to leave, but very happy to sleep in my own bed and give my kitties lots of kisses!

      today i'm spending lots of time unpacking and getting all my stuff organized (as well as jumping straight back into work - hello, 7-hour shift!) so i thought i'd share this awesome smoothie recipe with you that i made while i was in maui!

      Mango Blueberry Smoothie

      Ingredients (serves 1)
      • 1 container of Mango Chobani
      • 1 frozen chopped banana
      • 1/2 cup fresh blueberries
      • 1/2 cup milk
      Instructions
      Place all the ingredients in a blender and blend until smooth.

      Cinnamon Banana Bread.

      I knew that I was going to be slammed with lots of assignments & shifts at work this week (spring break, i miss you!) so I wrote this post on Sunday night for you guys!


      I made an amazing loaf of banana bread on Sunday that is definitely a must-make.
      Cinnamon Banana Bread

      Prep Time: 10 minutes
      Cook Time: 50 minutes

      Ingredients (12 slices)
      • 2 medium ripe bananas, mashed
      • 1/3 cup plain greek yogurt
      • 1/4 cup butter, melted
      • 2 eggs
      • 1/2 cup + 2 tablespoons brown sugar
      • 3/4 cup oat bran
      • 3/4 cup flour
      • 1/4 cup flaxseed meal
      • 3/4 tsp baking soda
      • 1/2 tsp salt
      • 1 tsp cinnamon
      • 1/4 cup cinnamon chips, optional
      Instructions
      Preheat oven to 350 and spray a loaf pan with cooking spray.
      Combine banana, yogurt, butter, and eggs in a medium bowl.
      Add brown sugar and beat to incorporate air into the batter.
      Add the rest of the dry ingredients and stir until just combined.
      Stir in any additions you would like to add (chopped nuts, dried fruit, chocolate chips, etc.)
      Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.

      This is my favorite banana bread I've made to date! 


      I immediately enjoyed a slice hot out of the oven with a smear of almond butter.. and then promptly went back for a second piece because it was so good!

      i'm definitely going to participate in the challenge to add in some extra veggies this month! i've been slacking a little bit lately so this is just the kick in the pants i need!

      {tortilla with barney butter & strawberries}
      {toast with crunchy barney butter & vanilla CHO with almond meal mixed in}
      {all natural chicken and prosciutto ravioli with marinara and parmesan}
