Chocolate Chip (Oatmeal) Cookies

This is probably one of the first recipes I made when I was a kid and I still love making it! My brother always asks for these cookies when I get the urge to bake. 

Some of you guys may consider these to be chocolate chip oatmeal cookies because there's a decent amount of oatmeal in them - but my family has always made chocolate chip cookies with oatmeal so they're the usual for us :) 

Chocolate Chip (Oatmeal) Cookies
makes about 24 cookies

Ingredients: 
1/2 cup butter
1/3 c + 1T brown sugar
1/3 c granulated sugar
1/2 tsp vanilla extract
1 egg (or 1/4 c egg substitute)
1 1/8 c flour
1/2 tsp baking soda
1/2 tsp salt
3/4 c oatmeal
1/2 - 3/4 c chocolate chips (depends on your preference, my family likes 1/2 cup)

Directions:
Preheat oven to 375. Measure your butter, sugars, and vanilla into a bowl and beat with an electric mixer until well combined. 



Meanwhile, place your oatmeal in a food processor or blender and let it go until the oatmeal is finely ground. Place your the rest of your dry ingredients in a bowl (minus the chocolate chips) and add the oatmeal "flour"; stir.


Add your egg to the wet ingredients and mix until well combined. 


Then slowly add your dry ingredients to the wet until everything's mixed in - the dough will be thick. 


Hand-stir in your chocolate chips.


Spoon by tablespoonful onto an ungreased cookie sheet and bake for 8-10 minutes. 

The most important step: eat one hot out of the oven!
