I made mine a pizza - it was really good, despite the fact that you can't really replace crispy and doughy pizza crust. But it was a really big portion (love) and had all the flavors of pizza!
Ingredients:
- 1 extremely large portabella mushroom (mine weighed 7 oz)
- 1/4-1/3c pizza sauce
- 2 T parmesan cheese, divided
- Italian spices (I used garlic powder and another spice mixture) ~1/2 tsp
- 1/2 c chopped steamed broccoli
- 1/4 c shredded sharp cheddar cheese
First... wash your mushroom.
Then mix your pizza sauce, 1 tablespoon of the parmesan, and spices together.
Chop your broccoli and stir it into the sauce.
Place your mushroom on a pan lined with foil and spread the sauce over the top.
if you want to know how big this mushroom is... that is an 8x8 in pan. |
Then add the cheddar and the remaining parmesan, and any toppings you want to add (I added two all natural chicken parmesan meatballs).
Bake at 400 for 20-25 minutes and enjoy!
Next time I think that I might bake the mushroom for 10 minutes first to get some of the liquid baked out. It was a smidge too "juicy" for me and I think that some of my spices/flavors leaked out with the liquid during baking.
Other than that I really enjoyed this new twist on pizza! I've never had mushrooms this big before and it was definitely fun to try something new.
